Can someone explain to me what the N and S stands for in an ephemeris? for example ”Sun 04n09” and why do i need this information more than just what zodiac the planet is positioned in ?

Are you using the astro.com free pdf ephemeris in the “declinations” version? If so, that’s the declination north or south. Isn’t about degree position by sign. Declinations have to do with how far north or south of the celestial equator a planet is. And we use them for another type of aspects, for one thing. For example if one planet is 04 N and another planet is 04 S, that is a contraparallel and is similar to an opposition. If two planets are both at 04 N, then that is a parallel, or like a conjunction.
