Instead of the meat (chorizo, ham etc) I sliced up some tofurkey sausages and tossed them in oil and blackening spices (and liquid smoke!) then blackened them in a medium hot skillet. Instead of using meat drippings for roux, I just used my standard method of 1:1 ratio of oil:flour. Next time I may try with soyrizo to make it closer to her recipe.
